OUR PRODUCER

Don Apolonio

Castilla-La Mancha, Spain

From the heart of the Spanish plateau, Don Apolonio crafts sheep's-milk cheeses that carry the flavour of La Mancha — patient, honest and rooted in a family tradition of cheese-making.

Aged over 15 months in the cellars of La Mancha

The Curing

This wheel is carried to cool, still cellars and left to rest for more than fifteen months. Over that long, patient maturation the paste turns firm and crystalline, and the flavour deepens into the intense, lingering character that defines a true reserva.

The Raw Ingredient

Everything begins with the milk of the native Manchega ewe — naturally rich and high in fat and protein. It is this exceptional milk that can withstand such a long maturation and reward it with so much flavour.

Perfect Pairings

A reserva this old is built for serious wine. Its firm, crystalline paste and intense, lingering flavour stand up to structured reds and dry, nutty fortified whites.

  • Rioja Gran Reserva — Long-aged Tempranillo with the depth to match a cheese matured for over a year.
  • Ribera del Duero Reserva — Powerful tannins and dark fruit that carry the intensity of the paste.
  • Oloroso Sherry (dry) — Nutty and saline — the classic partner for a well-aged sheep’s cheese.

The Land

Nowhere else could this cheese be born. The high plateau of La Mancha — its dry air, its fierce light and its native Manchega flocks — gives these cheeses a depth of flavour that simply cannot be copied.
