Pressed exclusively from the milk of Manchega sheep grazing the high central plateau, every wheel carries the Protected Designation of Origin seal that guarantees each step — from pasture to cellar — follows a tradition kept alive for generations.
Tasting notes. Rich and buttery, with the gentle nuttiness of toasted almond and a long, savoury finish. As it ages, notes of caramel and browned butter emerge, balanced by a clean, lactic brightness.
Texture. Dense yet supple, breaking into fine crystalline flakes as the cheese matures — the hallmark of a properly cured Manchego.
Ingredients
Pasteurised sheep's milk, salt, animal rennet and lactic ferments. Preservative: potassium nitrate (E-252). The rind is treated to prevent mould (E-235) and is not edible.

The Curing
Once pressed into its wheel, the cheese is carried to cool, still cellars where it rests for months. In the dry mountain air, time does the work — the rind hardens, the paste deepens, and the buttery, nutty character of a true Manchego slowly takes shape.

The Raw Ingredient
Everything begins with the milk of the native Manchega ewe — naturally richer and higher in fat and protein than other breeds. It is the reason authentic Manchego tastes so full, so buttery and so deeply savoury.

Perfect Pairings
A D.O.P. Manchego is a wine cheese through and through — its firm, savoury, gently nutty paste asks for reds with real structure and dry, nutty fortified whites.
- Rioja Reserva — Mature Tempranillo, with red fruit and soft oak that echo the cheese’s nuttiness.
- Ribera del Duero Crianza — Firmer tannins that cut cleanly through the richness of the paste.
