The Seasoning

What sets these olives apart is the aliño — the traditional Andalusian art of dressing them in a fragrant blend of garlic, thyme and wild fennel. It is this careful, generations-old seasoning that gives them their unmistakable herbal, aromatic character.

The Raw Ingredient

It all begins with the fruit itself — olives harvested at just the right moment, when they are green, firm and full of flavour. Only sound, hand-selected olives make it into the jar, which is why every bite is crisp and consistent.

Perfecte combinaties

Deze olijven zijn gemaakt voor een glas wijn — hun frisse, kruidige en licht bittere beet vraagt om droge, knisperende witte wijnen en de bleke, zilte sherry’s van Andalusië.

  • Fino Sherry — Kurkdroog en verfrissend; de zilte toets is dé Andalusische combinatie voor een groene olijf.
  • Manzanilla — Nog frisser en maritiemer, een echo van de zilte, kruidige beet van de olijf.
  • Verdejo (Rueda) — Levendige zuren en een vleugje venkel die de kruiden-knoflookaliño mooi begeleiden.
  • Albariño — Citrus en ziltheid, een fris en zuiver tegenwicht voor de kruiding.
